Clear Corn Soup

Chinese soup recipes are some of the easiest soup recipes.  Some can be complicated due to the ingredients used, source of ingredients for the soup, and the perfect timing to cook them.  But this Clear Corn Soup recipe I’m doing is real simple.  Using simple ingredients but cooked the Chinese way (I guess this is my own Chinese cooking style!).
 
Clear Corn Soup
Now let’s look at my Clear Corn Soup recipe:-
 
Clear Corn Soup ingredients:
1 no. of corn (cut to smaller pieces/ halved)
1 no. of onion (wedged)
1 no. of chicken whole leg (cut to desired size)
1 no. of large tomatoes (wedged)
2 litres of water

Clear Corn Soup seasonings:
1/2 tsp of chicken powder (knorr or maggie lar…this is optional, up to you)
Salt and pepper to taste

My soup recipes are always easy – toss everything into a pot of water.  Bring to boil then simmer under low fire for 30 minutes.  Is this not another simple food recipe?  And well balanced too – with vegetables and meat.  Serve Clear Corn Soup with rice and done with your dinner!  That’s why I agree that soup should be considered main course instead! lol!
 
In fact most Chinese soups are easy.  The only hard task is to identify the ingredients and find them.  Most Chinese food ingredients are easy to find locally in Malaysia, I’m not sure about other countries.  Here, you can easily get them from supermarkets and hypermarkets where there are labels for you to identify and make sure you get the right one too ;)
